my suggestion isn't about tying the hair up. I mentioned this one to mention that others are struggling with it.
but adding a hair tie command is not the goal of my suggestion.

my suggestion is to take the HAT off, not the change the hair

fair, but I think it makes the most sense to combine suggestions surrounding the new hair styles and solutions to handle the issues players have surrounding them.

That I can agree with

Just to add my two cents, the ideal implementation from my perspective is to define a non-tied hairstyle and a tied hairstyle. What this means for players, is that they would be able to choose their main hairstyle (any hairstyle in the barbershop) and for their second (tied) hairstyle, they would be able to pick from any hairstyle that looks/is considered tied up in the barbershop.

For example, on a female character, I could pick a really long hairstyle for my general main hairstyle, then choose the base game ponytail as my tied-up hairstyle, and then whenever I use the command or item to tie the hair, it switches to that hairstyle. The same could be applied to say, the lengthier male hairstyle to the "man bun" / the Steven Seagal hairstyle.

This would allow the players to make their own customization choices and still provide the hair-tying feature. Maybe a little more work than a set-in-stone hardcoded hairstyle selected by the developers, but it'd be a nicer way to implement the feature for players than to force one specific hairstyle upon tying the hair.

Does anyone know what became of all this?
I see that the hairstyles are still non-hat compatible, but I was wondering if anyone knows if it's a WIP or not.
I mod hairstyles for FFXIV to be hat compatible, and would be happy to help if it's something that can be done similarly in GTA V Online!

that is not something we control the hats not being compatible with the new hairstyles is just because the new hairstyles from gta online were not made to work with hats. However the hair tie solution or something similar would solve this

Yeah, I get that. I was asking if there is a way to convert them to be hat-compatible, since the functionality exists in the game. I found a video that shows how to do so with something called Ped models. Are these the type of model the new incompatible hairs are? If they are, then I'm happy to dip my toe into learning GTA V Online hair modding to help convert them :3

Ped models are just premade character models (think NPCS from gta and gta online)
