we already have taco trucks and they barely get used. I cant see this getting much traction. the gameplay loop for the job would basically be the postal job.

You are free to start any in game business you would like to. You could try and work with a store owner for example and get food at a cheap cost and then advertise a delivery service and have people call/text you to have food brought to them. There are other players that have already done similar things in game.
